Mango Coconut Fro-yo with coconut granola
Ingredients
Muesli
- 40g coconut chips, roasted, crushed (optional)
- 1/4 cup white chia seeds
- 3 cup rolled oats
- 165 grams pepitas & sunflower kernels seed mix
- 1/2 cup natural sliced almonds
- 2 tbs olive oil
Fro-yo
- 4 cups of frozen mangoes
- ½ cup Greek yoghurt
- ½ lemon, juice
- 1 tsp ground cinnamon
- 4 tbsp honey

Preparation: 40 Minutes
Method
- Preheat oven to 160C. Mix together coconut chips, chia seeds, oats, pepita mix, almonds, and olive oil.
- Spread out onto a lined baking tray and bake for 30 mins until golden brown, stirring halfway through.
- For the fro-yo, in a food processor, blitz the mangoes, yoghurt, lemon juice, cinnamon, and honey until smooth.
- Serve fro-yo with the roasted muesli.
